Sounds like a bug. You’re going to hate my suggestion but…
I recommend you factory data reset the phone again. Especially if a power cycle (powering the phone off and on) or a battery pull fixes it but only temporarily (sounds software related).
After you backup and reset TRY the phone with NO apps for a couple days and see if it starts happening again. If it does and you didn’t download any apps from the Play Store then the device might be defective.
Chances are though that it’s an app or something that was added to the phone causing problems.
Also use the stock keyboard if you’re not. If the phone works fine without any apps after the reset then start downloading apps again BUT one at a time. Download an app try it for a day download another app try it for a day. If you download an app and your phone starts having issues uninstall that app and don’t use it anymore, and if it’s still having issues after uninstalling the app then do a factory data reset.
This should clean it right up.
