rooting is the process of gaining root (or full) access to your phone. this way, you can flash other ROMs that the one that came with your phone (for example, you can get a Nexus One ROM, which is the stock android, and get rid of the Sense UI). you can also easily install themes and have access to apps and tools that you couldn't normally run. some people even say it makes some phones run faster.

its partialy rooted, needs custom rom as wroten [ROM][23/08] WildPuzzleROM, EXT4, apps2sd, supercircle batterymod! and alot more! - xda-developers
