for a Samsung Galaxy 3, how can the hyperlink color be changed? The default blue is almost unreadable.

Unfortunately i do not know if it actually can be changed, without downloading an app that might do it for you.

I would suggest maybe looking on the app store for some phone skins or maybe a launcher, that is the only way i would know.
