Default Add/remove options in contact

Standard dialer app. Contacts tab.

How do I change what options are displayed for a contact.

For a given contact I'll see:
Name
Contract History
Call mobile
Call work
email
chat
view home address
facebook
etc etc

Somehow I managed to globally remove the "Text Mobile" entry for all contacts. I'd like to add it back. I know you can tap on the contact picture and select the "" icon but I was trying to find where the settings are that control what contact entries are displayed.

There should be an option at the end labeled "more" that opens additional options.
