Default Android Smart Phone Upgrade to CM7?

I've upgraded my phone to CM7 (Cyanogenmod). I did a backup of all my apps and data etc before I upgraded.

All the Apps and Data still seems to be on the phones memory after upgrading so does that just mean I need to reinstall the applications because its essentially a new O/S?

Or would restoring the Titanium backup be the best option?

When I first got into the new CM7 I put in my googleaccount details but chose not to sync until I had wifi back up and running. How do I now get that option back so I can sync and get all my contact details back etc?

Final question, how do I overclock the CM7 install to 1.1ghz for the cpu?
