Do you have to root the device to do all sorts of snazzy stuff like some of you guys have done with your backgrounds/menus etc?

The easiest start point I would suggest is the following:
Launcher -
Nova or similar gives you more home screen options, let's you customise icons and folders etc
Desktop visualizer -
Create widgets / icons with any image
Icon packs -
Search for icon packs in Google play to find icons that match a theme. Most can be used with a launcher to replace standard icons.
Widgets -
There are many widgets out there for instance, clocks, weather, text widgets, battery, and so on which can normally be customised to your theme colour etc. Search Google Play and see what you like.
Obviously rooting does a whole lot more, but most of the stuff you see in this thread can be achieved with Launchers, Icons, Widgets, Desktop Visualizer and so on.

Its Make Your Clock Widget (4x2). I got that from an already made design called PurplePower

It's Paranoid Android, they have the navbar in what they call PIE (can go top, bottom, left or right) and Expanded Desktop which means way more real estate. A true innovation I believe.

There's almost daily updates on Paranoid Android at the moment (last 4 ROMS were 18th, 21st, 22nd and 23rd)
I am on the 21st build and the increase in usability from 18th - 21st was massive, I'd give it another go.

I like this pie thing. I went ahead and got LMT launcher, but can someone explain to me how to make the nav bar go away but still be able to access Google Now?

I used a pie for the action and made the action google now. You can see it as ACT on the left. I later changed it to the icon so it looks a bit nicer. Also, if you want google now to show in curved notification banner you need to go to settings, accessibility and turn LMT on. Make sure you are on the latest version, 1.85. Then you can just swipe to that GNow notification and activate GNow.
