I purchased Launcher Pro a while back but haven't used it under ICS.
Maybe I'll give it a go with the Nexus 7 to give me a more standard tablet UI...

Apex just hasn't done me well. Looks cleaner, but runs a lot clunkier and lags much more frequently. Nova is pure speed for me, however

It's ADW-EX Launcher and One More Clock widget. I liked One More Clock so much I bought the paid version. A lot of different customizable clocks.

If it is like the GNex you press and hold Volume Down and Power simultaneously. It may take a few tries to get the hang of it, but once you do its easy.

It's the same as ICS. Volume down and power button. That's how I captured my home screen.
