OK - first off, I deleted "Gallery" from the tablet and now I cannot re-install it.
Second - I am going on a long trip and will be using the Nexus 7 to do daily travel logs. My camera is a Nikon Coolpix S8100. I cannot figure out how to transfer photos from the Nikon to my Nexus 7. The Nikon does not support Wi-Fi. HELP!!!
How did you delete it? Even being rooted, I can't delete it.
Are you sure you just didn't disable it? If so, you can go into Settings -> Applications -> All Applications, find the Gallery and enable it.

If you use any kind of computer you can use it to transfer files - including images - to your Nexus 7, and of course from your camera. But I assume you mean directly, in which case you will need an OTG cable and something like Nexus Media Importer which while not free is very good at its job - and doesn't require a rooted tablet.
Works perfectly with my camera(s). :-)
