Currently have a T-Mobile Nexus 6 with a verizon sim in it.

I have seen a few apps that I want to take advantage of which require root such as notification light, tap to wake and Wifi tethering.

If I root this, will it continue to receive the OTA updates?
 
If you root the phone you have modified the software, so I'd not recommend applying OTA updates (if you are still able to), since these will be designed to be applied to unmodified software. But you will be able to get updates in the form of custom ROMs very quickly, or could apply the factory image and then re-root.

Hadron is correct - once you root, your software is 'modified', and post Lollipop, you will not be able to successfully apply OTA updates (you will receive it, but installation will fail).
You will need to download the factory images and flash all the images (except userdata.img : to avoid losing data) using fastboot
