As of right now since I just started grilling I am operating a 15 dollar charcoal grill from dollar general haha. I love getting creative with marinades and stuff that changes flavors. I will def post some pics soon

I used it once already in June for some 3-2-1 ribs as I had already filled my larger one to capacity. It seems to cook just as well, but doesn't have the granular tempurature control the Texas Elite does. It has three settings, low (~225), medium (~350) and high (~450) which is probably good enough. The newer models have foldable legs so you can smoke on a tailgate if you want with the advantage one person can lift it in and out. While it isn't a problem weight wise with the one I've inherited, it is a bit awkward with the legs. I may take a look at the feasibility of modifying the legs since I'll have a week of just staring at it while imbibing some liquid imagination. :D

It says it will get your pizza ready in 3-6 minutes. That would be cool.
Yes, it takes 8-10 minutes to cook a pizza on the grill. It I didn't have the Traeger I would be all over the pizza oven though. As I said, I've even been tempted with the Traeger. :D

I haven't had a steak in a dog's age. Someone recommend a cut? Juicy please, medium rare.
Any steak is a good steak if it is prepped and cooked right.;) For easy grilling I'd go for a porterhouse.

Tomorrow is drive the campground crazy night. I've got a 4 pound spoon roast that I'm going to cook on the Traeger Lil' Tex using hickory. Not only will there be that sweet smoke smell wafting across the campground, but the undeniable great smell of slow roasting beef. :D

Big weekend calls for big grilling plans. :D I'm going to smoke a butt Saturday while I'm mowing lawns. I anticipate a large crowd at the cabin this weekend so pulled pork should work into the mix well. I have a bunch of burgers, dogs, and brats that I plan on grilling once I'm down there. Everyone is bringing salads, chips, and the like. The women are in charge of the breakfasts... they never let me down. I'm thinking we will eat well. :)

Anyone have any special cook out plans for the holiday?

That's a nice looking table Kaat! Now that you've had it for a couple of months, how well is it standing up to the elements? It looks like it's constructed of pine?

I tried to buy me a cheap grill for my trailer. I have a decent gas grill at the cabin but I find that the wife and I most often stay in the trailer when we are the only people down at the river. I can easily walk to the cabin to grill something but it would be even easier if I had some small/cheap grill at the trailer. I was thinking of something with just two burners and no side burner. The trailer has a quick LP connect for a grill... would be easy to convert a conventional bottle system to hook to the trailer.
I waited a couple of weeks too many before I started shopping for such. It seems my grill display has been replaced with Christmas lights and fake trees. :( So much for waiting for the end of the season sales.

There is still stuff available online. :D I've had my eye on this thing for an easier camping grill / smoker.

Easily run on a tailgate, plus you can add woodchips and smoke with it. If you are using large tanks I don't see why you couldn't smoke a butt on it.

That's pretty sweet looking. Looks highly portable as well. I couldn't find the square inch grill area measurement. Is it large enough to do a couple of racks?

I'm permanently set up so I don't require portability. Any old home grill would suffice. I'd opt for a pellet grill in a second if I thought I could keep it out of the elements. Out in the wild, it would likely be a bad choice. That's why I wanted some sort of cheap gas grill. My buddy bought one from Wally world a couple of weeks ago for seventy five dollars. It was their display and had set in the lawn and garden all summer. It was a bit scuffed and showed a bit of rust at the lid hinge. But hey..... SEVENTY FIVE bucks.. now that's what I'm talking about. If it goes down the river in a flood... if the vandals steal the darn thing... no biggie. I should have shopped a couple of weeks ago.:(

Last time I made these they got wiped out, so I needed to double the quantity to 12 pounds. All cut, prepped, and rubbed (salt and pepper on the large pan, Jamaican Jerk on the smaller). I'll put them on the smoker a little later for dinner. The salt and pepper ones will be tossed in either BBQ, Franks Red Hot, or Salt and Vinegar once cooked.

Get those napkins ready.

I've had some amazing dishes from the Traeger since I last posted. Most notably was a prime rib to die for and some smoked shrimp. I'm off work today so it seemed a perfect time to pull some pork. I rubbed down my butt last night and she be taking smoke right now. It's been a while since I last had pulled pork and man it sounds great.

I have new neighbors since I last smoked. Yesterday we were on speaking terms. Today they are going to hate me.
The aroma of pork butt and apple wood is a killer. Perhaps I should take them a tin vs becoming enemies.:D
