I'm in love with Skyvi! I asked her to marry me but she told me she wasn't into humans. For me Voice Recorder is a must as well, since my mom likes to receive audio clips of her grandson "talking" (she's got a no-video phone).

Or maybe she isn't a lesbian.

gotta add NOVA launcher to this list. if you download it and don't change any settings, it IS the stock launcher. why not give yourself the option for more customization though? they have put in so many things that should have been standard in ICS.

I like Beatiful Widgets, but also (if I can afford to buy this thing next month) Oruxmaps. It's the best stand alone GPS app that you can create offline maps with IMHO. Does tracks and everything else.

Tasker, but I haven't been able to get it to work on ICS yet. It keeps crashing on me. aCar is also great for keeping track of when I need to have things checked and what sort of mpg's I'm getting.
Dropbox (Cloud file storage)

Beautiful Widgets (I'm going to have to take a look at BeWeather though)
Kindle (I'm getting a real Kindle for Christmas, but this is a great phone to read on)
Key Ring (Too many rewards cards)
Google Wallet & PayPass locator
TeslaLED (Flashlights are so last year )
Zedge (louder ringtones are a must)
Amazon appstore = 1 free app every day after 1AM est
Volume+ = helps with low volume problem
Dolphin HD = Best browser for android
RealCalc Scientific Calculator = Best calculator
Ringtone maker = make ringtones out of your songs

Gauge Battery = nice battery widget
Soundhound = tag songs you like but don't know the artist
Google Voice = Everyone needs this!!!

I like Fancy Widgets. You can assign what apps open when you touch different areas of the widget. Examples: I touch the minutes and it opens my stop watch and timer app, Hours opens my alarm clock, date opens the calendar, weather icon opens my weather bug app. You can assign any app you want to the 8 different areas, it also has an option to display your battery percentage in the widget next to the date.

Silent Toggle Widget, Bluetooth Toggle Widget. Wifi Toggle Widget
Widgetsoid - I tried the individual widgets and although they were nice, but I really liked having the toggles in my notification bar instead. Customizable too!
Nova Launcher - enhanced ICS home screen plus reclaim your screen where the google search bar is!

Where you guys getting Nova Launcher...it's not showing up for me in the Market?
I think Android Sync Manager is a must, especially since they use the new file system.
Skype is now working thanks to a fixed patch by XDA developers. File Picker is one of my favs as well as titanium backup. Astro file manager is one of the first apps I install on it.

One thing though if someone could clarify it for me. This Amazon App store, for the free app, do you have to have a credit card for the "free" app? I tried to download todays and it said there was a problem with my payment method

You'll need to put a CC on your account. It won't get charged. I honestly don't know why they need it, but I put mine in anyways. I kinda made a big fuss over it, but I guess it wasn't that big of a deal breaker.
I guess I'll add some more apps.
Movie/Flixster = nice apps for showtimes from theaters and movie reviews
Shazam = Alternative to Soundhound, does the same thing
Riptide GP = one of the best looking water racing games
Talking Tom = good apps for kids, mindless funny quotes repeated back to you
Spectral Soul = closest thing to Final Fantasy Tactics
Cut the rope = clever game that tests your brain
CarHome Ultra = nice car app

I saw some posts on other threads saying Google+ is battery hog. Is that true?
Well I know it runs in the background all the time even if you don't have a Google+ profile/account. I disabled it since I don't use Google+ (or facebook or myspace for that matter), but I haven't noticed any change in battery life.
In fact my phone burned through at least 14% of the battery with the screen off and no apps running while I was sleeping.

What features does PowerAMP have that you like? I was unimpressed with the stock music player on my Incredible. I just got the Nexus last night and haven't used the music player at all, but I might want to look for something new.

FartDroid. All in all it's not that great, and the banner ads are worse than they used to be, but when your phone starts farting Jingle Bells... it'll always get a chuckle.
On a more serious side:
I love using Audio Manager (paid or free). AndChat - best IRC client I've used for Android thus far. Aldiko - and one of these days I swear I'll actually finish reading all those H.P. Lovecraft books I downloaded. ConvertPad - unit conversions of all sorts EStrongs File Explorer - switched to it when Astro got outta beta. After it updated to include multi-version backups and now even color coding... I love the app.
A Flashlight app - The one I used on my Droid is no longer on the market, so I went with Tiny Flashlight + LED. I saw how the Dev donated several phones for the Phandroid contest and thought that was pretty damn cool of him. Tricorder - no longer on the market, but I had it backed up from before it got pulled. It crashes sometimes but it's still freaking cool.

this wasn't on my list of must haves until the update yesterday, but TinyFlashlight will now let you shake the phone on the lockscreen to activate the rear LED on ICS devices. this is a lifesaver when you need a flashlight fast, as is generally the case.
Since switching from LauncherPro to ADW EX I discovered Android Pro Widgets. 14 different widgets for bookmarks, calendar, twitter, etc... It also has theme options. Even the free version has a great looking theme.
I'm getting my Gnex on Monday!
