Do I have to use kies for updates? If so, how?

You don't have to use Kies for updates, but I would recommend that you do as it's the safest way of doing so.

Install Kies on your PC, then simply connect your phone to your PC via it's data cable and Kies will automatically check for updates for you.

Yes, you can use Kies on Macs However, you need to make sure you download and install the Mac version of the software. There is a link to the Mac version on the page I linked to.
