I'm wondering if you changed a setting in the S-Note menu or toolbar at the top.
Have a slow, careful look at the S-Note app menu and toolbar. Also, make sure you're not just invoking a template that has that text feature un-selected. I did that once and was puzzled for a bit, then found out I was not letting the default settings come back when starting a new template/document.
The other thing is to go ahead and "start over" be going into the Application Manager and hitting the S-Note/S-Pen app and clearing the cache and data, then reboot your device. That would re-set everything on those apps to their defaults.
