Hmmm.. interesting issue, zBuster. I'm wondering if the sensitivity on the screen and/or keyboard is a bit too high, allowing for a sort of phantom double click, which would return the caps tap back to lower case. Of course, if that were the issue, you'd very likely see other symptoms, such as more than one letter/number etc on the screen as accidental double taps there, too.
Are you using the stock keyboard? If you are, perhaps Smart Keyboard Pro would resolve the issue, or some other 3rd party keyboard app.
