Default Accessing SIM and Import/Export Contacts on Galaxy S2?

Please can somebody help me with the following issues as I am having troubles sussing it out myself

If I create a new contact (first name, last name, phone num and email addy) and save it to phone. Then export it to SIM. Then delete it from phone. Then import it from SIM....
The contact's email address has disappeared.
What's happening here?
I want to be able to export/save my contacts to my SIM for safe-keeping but not if I am going to lose important data such as somebody's email address.
If I import contacts I previously saved to SIM (saved to SIM using my old Galaxy S) then these contacts DO DISPLAY their email addresses.
Very strange.

How can I edit/delete contacts on the SIM using my Galaxy S2?
I have tried all ways including through KIES but cannot find a way.
