The only thing i can think of is to reset / format the phone and then when your done just do not setup the gmail account - If anyone else knows of a better way then you can probably follow that but i suppose this would be the last resort -

Tap Settings > Applications > Manage applications.
Scroll down and tap Gmail.
Tap Clear data.
Press the Back key.
Scroll down and tap Google Apps.
Tap Clear data
It works real fast, then set uop a new one if you like
Actually, you can erase and register new or another Gmail account, but you have to do a Factory Reset. But if you do this step, you can erase almost anything on your phone, like contacts, photos, messages etc.
I have a simple tutorial how to remove your GMail account on Android Market without doing Factory reset. OK, follow this step :
1. Download Root Explorer from Android Market
2. Explore to /data/system/ and find this file : accounts.db
3. Delete that file (accounts.db)
4. Reboot your Android device.
5. Walla…you can register another account

I have the galaxy S and it doesn't have Google Apps to clear.
Instead, I have:
Google backup transport, Google calender sync, google contacts sync, google partner set up, google search and google service framework.
I cleared them all and it didn't help.
I can't delete the account even that I have a new one.
There is not an item called 'Google Apps' I think the other user meant to find any Google related apps and clear the data in them.
The other drastic thing you can do is a factory reset or software repair but I don't know what Samsung give you as options for this. It may be worth asking over on the Galaxy S forum for more specific instructions.

I renamed accounts.db to accounts.dbold just in case it all went wrong. I crossed me fingers, and rebooted. And clicked Market, and the Accounts and Sync settings window popped us empty as the head of a blonde! Thanks to you. You are a lifesaver!!
I bought Sony Ericsson Xperia X10 Mini before two days. I forgot to tell them to delete the exsisting account and I don't want to do Factory Reset because it contains my favourite apps. help me..!!!

This thing doesn't work. When it asked me for Root, I Rooted it. But, again doesn't work.

go to settings, accounts and sync, then click on the google accounts you want to get ride of, click remove account... I had the same problem and figured it out, this way is a lot easier than formating or anything like that.
Does anyone knows how to remove or change an gmail account on this phone?
I'm receiveing emails and i wanted to stop it...

I had similar trouble and just worked it out this way
Go to:
- Settings
- Then to Accounts and Sync - Select the account that you want to delete
- Select Remove account (some devices may have this option on the settings or activity botton, try selecting that to see the option)
