    My HBOOT version is 0.00.0000??

never heard of this, was thinking of rooting...

also, does the hboot version change when I install OTA updates or when I get Froyo updated on my Desire?

Not sure about that m8, but if you don't want to lose the ability to root then don't get the ota update

turn off your phone, then turn on again while pressing the back button.
When the phone powers up your boot loader version should be the second line.
It should say hboot then the version incidentally mine too is 0.80.0000
