I heard that once you root your Android phone you can save the .apk files from the android market for backups. Is this true? If so how do I do it?

You can use any good file explorer to copy them from the /data/app/ directory.

IF you're new to rooting your best option would be to use Titanium Backup until you learn to play with adb shell via command prompt.
