This method will result in the loss of data. Your apps and settings will be wiped. However, it does really only consist of 2 steps:
1. Use RSDLite to flash back to 2.0.1
2. Use a modified, signed update.zip to update to 2.1 w/ superuser access (rooted)
Sorry, I've had this file for over a month now, and I've completely forgotten about it. It was made by speeddymon at Alldroid (RIP).
Follow these instructions to flash to 2.0.1 SBF:

Download this modified file (rename it to update.zip):
ESE81-update-root.zip
Then, follow these instructions to force the update to 2.1, using the modified file:

The end result is stock ESE81, with superuser (root). From that point on, you can use ROM Manager to flash either recovery, and do your thing.
