The thing is, even if you had juice defender enabled, your widget on the homescreen should take precedence over juicedefender. I.e, if you turn the widget off, data should turn off, full stop. What you're seeing is not juicedefender behaviour.
So the only thing I can thing of is that perhaps juice defender didn't uninstall cleanly. I would reinstall juicedefender, open it and, importantly, turn juicedefender off within its own settings. Then you can uninstall it, and it should leave your settings as normal.
Then hold power and pick restart, for good measure. (It's important to use the restart button, not the off button).
