Voice dialing via Bluetooth does not work with Android 2.1 on the Sprint HTC Hero. The only way you can get it to work, as far as I know, it to root your handset and install an Android 2.2 ROM.

It was one of the big things that Android 2.2 added as a feature that everyone was complaining about. There are a couple apps you can try, like Vlingo for example, that might work, but I still do not think it will work 100% via Bluetooth.
