What is the current kies version on Captivate, and how do you find what version your phone is running?

Assuming you are talking about Kies Mini, the current build is 1.0.0.10104_1.

You generally can plug your phone into your machine (making sure that Firmware update/Kies is selected on your phone and make sure you are using the touchwiz launcher) and Kies will update it's software if there is an update available.

The full Kies isn't released or supported in the USA, which means for the Captivate too. Only Kies Mini.

Nothing to check on the phone, as Kies Mini doesn't install on your phone. It installs firmware on your phone, and you can check the version of that via: Menu -> Settings -> About Phone -> Baseband version

You can search for Kies 1.5.3.10093_82 or earlier and disable updates.
It still has tether functionality but the update removes it.
