When I called Sprint to transfer my number from T-mobile prepaid they says I have to leave my phone off until the number transfer is complete.

Will anything bad happen if I leave it on??

Doubt it. At some point you will have to cycle it off and then back on so it can pic up the port and do it's thing. Turned mine off and then back on and the port happened. They told me to turn mine off too. I did it for 30 min and then turned it back on and still hadn't ported. I cycled it off and on about every 15 min and it finally ported after about another hour. I did not leave it off the whole time. Just cycled off and on every so often. I don't think you have anything to worry about. Make sure your other T-mobile phone is off....at least that's what I did.

I didn't and just went through this. AT&T > Sprint. No problem whatsoever.
