Use a file manager such as Root Explorer or ES File Manager and navigate to /system/app and delete the bloatware.

Use extreme caution though as it is possible to delete items that you NEED. As an example, the GTalk app is used to access the Android Market on your phone.

Some of the benefits are deleting bloatware, being able to flash customized versions of Android, block ads, etc. It is not without it's risks though. READ, read, read and ask questions about rooting in your specific device forum for more help and specifics. :)

Best thing to do is use Titanium Backup to freeze the apps prior to removal. This way you can check that everything works before removing them.

Also you can use titanium to back up the apps before you remove them, that way you can easily restore them if needed and you save yourself from looking foolish :D

As for a list, best bet is to look on the G2S specific forums, either here or on XDA.
