So I will be getting an Incredible soon(shipped by 8/3) and I am coming from rooted Droid Eris.

What is the difference between doing Unrevokeds method and one like this
YouTube - Droid Incredible Root in 10mins
I have been reading about a full nand unlock, and that unrevokeds method doesnt do this yet and they are working on it.
doing root from the youtube video would that give me a full nand unlock so I can delete apps and stuff through adb
what are the full beneifts of a full nand unlock,

No, it will not give you "full" NAND unlock. The video makes use of Unrevoked's first tool, and is now obsolete.

Also, you do not need a "full" NAND unlock to delete apps. Just root using Unrevoked 3.1 and follow the simple instructions to remove apps posted here in the forum.
