Is there an app that will save SMS messages to a text file on the memory card so one can easily print them out or just save for a later time?

You could use SMS Backup from the Market. It's free and just sends a copy of your texts to your Gmail account. They will be saved in a folder marked SMS and you can print them from there. I use the version by Christoph Studer. It has 4 1/2 stars and 8458 ratings.

I don't know of an app that saves them to your SD card but I do have one that backs up all the text messages I get to my Gmail account and puts them under a specific label. Here is the link for it. It is called SMS Backup.

Thanks. I will try both of them out and see which works best.
