I'm using unrevoked3. I've got wireless tether and have Fresh ROM flashed. It took less than 30 minutes including downloading the ROM and I did this in my local coffee shop.

How did you flash Fresh with UR3? You need NAND unlocked to flash Fresh I though? Mind explaining? I'd like to flash Fresh and I'm rooted with UR3, so.

It just works doing Fresh. I also had URS and then loaded Fresh with no issue.

I used ROM Manager and am rooted with UR3. I'm by no means an expert but this did what I was hoping it would which was to remove all of the bloatware that was on the phone. I don't have much need for nandroid as my apps are all backed up on appbrain and all keep the data somewhere on their servers. Rooting doesn't touch your SD card so anything on there is left alone.
