Stock Android - Syncing

With a stock(Pure) Android device, can you turn on google syncing, but not sync Google contacts and calendar? Can my Exchange contacts, calendar, and email be pushed to Google's mail app? Can other IMAP accounts be pushed to Google's mail app?

Absolutely. A lot of people will have the syncing on to get gmail, but turn off contacts and calendar syncing.

Can my Exchange contacts, calendar, and email be pushed to Google's mail app?

Email yes, just go to your account and have it forward all mail to your gmail account. Calendar, I'm not sure how you do it, but I know it can be done.
