If you look here - Firmware archive | Samsung Updates - you will see that Jelly Bean updates have been released for a great many countries and carriers. I am unable to tell how many are still missing.

There is another listing here - Firmwares | SamMobile - but you will have to manually input a search for GT-N7000 as there is no way to provide a direct link.

To your question about Kies and OTA updates, I am unaware that there is any need to backup or restore your data. Of course it is a wise precaution to backup, for safety, but the upgrade should not cause you to lose everything.

Just be aware that for some people the upgrade has not gone well and the phone has been left with poor performance and/or battery life. The first step towards a solution is to factory reset the device, which will of course wipe many things on the phone (but not the SD card). Sadly, for some people, even that measure may not be sufficient. Hopefully everything will go well for you. Good luck in any event.
