Is android like windows etc where uninstalling an app leaves registry settings/ databases, etc that can at some point bog me down?
If so how do i go about removing this extraneous data?

No need to worry. The file system is an Ext3 filesystem i believe. This means that there is very low fragmentation, and all data is written in very close blocks. Because it is a linux based OS there is no registry to worry about. The only data you may need to clear out is any backup information that is written to your SD card by some apps
