What does "unmounting" sd card mean? Rooting my phone right now, quick reply needed!

No, all of your files and media will be retained. Unmounting simply removes the logical volume link between your handset and the microSD card so that you can safely take it out without fear of a read or write action happening which could cause data corruption.

It is basically the same thing as when you choose the option to safely remove a USB flash drive from Windows. You are unmounting that volume, so Windows can no longer read or write to it, so it is safe to remove from the USB port.
