I'm on my phone so I can't write anything lengthy, but generally Odin is a safe choice as well as using clorkworkmod recovery.

well gaining root is dependent on what device you have. for me and my evo 4g lte i used LazyPanda. but it has changed with each new ota. it went from LazyPanda to DirtyRacun to BabyRacun.

odin works on sammy devices, but that is pretty much all i know about them. i never owned a sammsung phone or tablet.
