I've updated my desire OTA to now have Cyanogenmod 6.1 which was released recently. I had RC1 before that, but I can't really see any differences.

Anyone found any or know of a definitive list?

Just as Danfrance says. RC (release candidate) releases are standard in Linux communities and are the developers way of telling the user to expect or even report bugs etc in an RC release. Once the RC has disappeared from the title the developer is satisfied about performance and stability and in most cases has already moved on to working on the next build.
