Make sure you backup your ROM first as removing some apps will mess it up. If you don't know how, read section 5 of this guide and follow the directions for installing CWM Recovery, and use it's backup function.

Friendstream
Flicker
Google Talk
News and Weather
HTC:
HTC Friendstream
HTC Hub/Hub Sync
HTC Likes/Likes Widget
HTC Trends Widget
Facebook for HTC Sense
And yes, you can use market as usual after rooting.
