Hello,
I would like to ask if there is some EASY and SAFE up-to-date way to root my x10 mini pro (2.1) ( I'm asking because I searched in many websites and almost every site offering different way, so I got confused)
Second question: maybe there is some way to write app to sd without rooting?
And third: is it possible to delete apps that I got then I bought my phone? Apps like demo games (for the god sake why do I need them?! They just taking valuable phone memory!)

i used superoneclick-google it.just follow the instructions on the official site and install it on your computer-does it all for you.
to delete built in apps use titanium backup(install it on your phone AFTER its rooted).i used it-works a treat.
as for running apps from sd card.i would love to know if its possible.

And one more question, in case of my phone get broken, will be possible to unroot it or something like that, so I can get warranty?

superoneclick has an unroot option built in.havnt tried it yet though.as with anything that changed a bios your taking a chance with your phone.but as i said,it worked for me.just be sure to follow guide on official site.
