So Ive seen videos and write ups on how to do it, I know its essentially a hack or jailbreak of the phone. However, can someone explain to me in a little more detail what the benefits are of doing this? What does doing this open up for the phone? What are the cons?

Root means superuser access. That means you have complete control over the entire filesystem.

What that means to the layperson --

You can install apps that require this elevated level of privilege, such as:

AdFree -- block ads!
drocap2 -- take screenshots
setcpu -- manage how fast your CPU goes
Titanium Backup -- the ultimate backup utility
Wifi tether -- turn your phone into a mobile hotspot

.
.
.

etc.

So, let me clarify one thing concerning that Wifi Tethering app. Would I be able to use it to supply an internet connection to sign into Xbox Live? I don't expect to be able to play multiplayer games with no lag, but I'd like to be able to sign into Xbox Live when I go out of town and have no available internet connection.

Yes i does work with xbox live. Actually I tried playing cod with it when my internet connection was down and it was laggy but it worked:D
But for some reason the only way I could get it to work is going into the setup and changing the lan to 192.168.1.0/24
And it took some good timing. It was really finicky to connect but it worked:)
