Android interfaces - are you stuck with the one that comes on the phone?

Hi there - I'm confused at how the various manufacturer Android interfaces work. For example, if I get the Samsung Captivate, am I stuck forever with the Samsung version of Android (can't remember what's it's called)? Can I download Sense to the Captivate? And what's the relationship of the manufacturer UIs to the other things I read about, i.e. Froyo, etc.

I guess my basic question is: if I buy the Captivate, am I stuck with the Samsung version of Android, or can I download Sense to the device?

You can get something like launcher pro to supersede samsungs touchwiz but to get rid of it you would need to root. then someone would have to port sense for your phone first before you could install it. I think anyway....
