I have a rooted phone running Kaos Froyo. I installed Root Explorer and I'm trying to uninstall the Amazon MP3 app as well as latitude, however I can find the correct way of doing this. I tried looking under data/app but don't see them in there.

Can someone point me in the right direction?

I already deleted Amazon MP3 with Titanium Backup (hint...), but you could also look in /system/app.

Could you also use Astro to delete this? I just went in and long press, edit, delete is an option. I just want to make sure It's actually OK to delete this way and it won't mess up my phone

No Astro can't do this because the apk is read only. Root Explorer has a button to mount the filesystem as read/write so you can delete it. Titanium Backup will automatically do it, so using it is a simple as clicking a button to uninstall.
