Root Help with Unrevoked Forever..

Hello All,
I am new to rooting and have not yet rooted my phone. I like the idea of running custom roms and kernals. That being said, I haven't decided 100% to jump into rooting and loading a rom yet, as I know I'll have to reload all my programs / backup my txt-messages & etc. I know the OTA is rumored to be soon, so I have heard that by running the "S-OFF" tool you can preserve the root capability and still update to the OTA.

So how do I do this? Do I have to root first? What is the easiest way to root? Do I need to back up all my files / txts / pics / etc? My main goal would be to still have my stock 2.1 loaded with the s-off so that I will have the ability to have root, but that I also will get the new OTA. I have spent a lot of time on different forums (mostly for car repair) and I know the first thing is to read through the forums, but i've read and seen so many conflicting methods and information, and watched a few different youtube videos all showing a different way to try to get root. I was hoping someone wouldn't mind putting it here in one place for everyone like me, or at least pointing me to the right direction. Thanks in advance!!
 
Thanks for the info guys. I've downloaded all the files I believe I need and I'm going to do this over the weekend. If I get the fortunate OTA Update screen I'll just hold off installing it until I'm through with the rooting / s-off / unrooting procedure... but then again I hear there's a rom of the newest build with all the bloatware already removed on the XDA site so I may just load that rom instead of unrooting. Thanks again for all the help and information!!

Honestly there has been some very enticing arguments, to just keep root and install the leaked ROM, as for myself, I unrooted and am awaiting the OTA2.2 just for peace of mind, and like mentioned above, I am coming from an Eris, with a plethora of custom ROMs to choose from. and don't for one second anyone take this as disrespect. there hasn't been any ROM that has caught my eye. Personally with the addition to change S-OFF back to S-ON, I will be very happy with the OTA 2.2, and then re-rooting, I was using 2.1 with root anyway, so it is worth it to me to un-root and wait for the official OTA.

obviously everyone is different and do different things for different reasons. This is my two cents, take it for what it is.
