Root s-off, now what?

You need to flash the Clockwork recovery IMG. The thread linked to above should have a link. You will then want to use that to flash a pay load from Unrevoked and Superuser. Again, links should be linked to somewhere above.

EDIT: I am going to be really honest here, and I am sorry if you do not like it. But it needs to be said. If you do not know what to do next, you should no be rooted with S-OFF. This is a change to the lowest levels of your phone infrastrucure, and it is not a place for people who have not done all of their research. This is, of course, my opinion, but it is a widely held one.

That being said, if you want to remove bloatware,

For all the other apps, just boot into recovery, mount /system under mounts and storage, and do the follwoing commands:

cd <path to your androidSDK/tools directory>
adb shell
mkdir apps.disabled
mv /system/app/<app apk name> /system/apps.disabled

Repeat that llast mv command for as many apps as you want. If you do not know what those commands do, please do not execute them. Also, be careful what you move, as some things are tied to others (Firnedstream will leave a contiuous sync if it is tied to an account at removal, IIRC).

I want to remove the bloatware and maybe save some battery life with diff Rom
Then you have some reading to do. Take your time, go step by step. In the end you will find a list of apps you can move (not delete) so they don't bother you any longer. Check out the links in the stickies, they are valid and a wealth of information.
