Sorry I'm such a noob at this.

I just got the Paint.net application and I was able to create the text icons that i want, but the problem I'm running into is not knowing how to take off the background of the image.

Right now I'm seeing my text in a white box.

Anyone with Paint.net experience know how to remove the backgroud?

Are you saving it as a .png? Select all and press delete. That will get rid of the background (you should have a white and grey checkered background) and give you an empty space to create an icon. If you want a background to help you create an icon (or test the transparency of it) create a new layer and apply the background. Once you are done, delete that layer. But make sure the layer with the background is on top of the icon layer, or else you won't be able to see the icon
