Root Uninstalling Unwanted stock apps

Someone please help with this! I have rooted and am using the terminal emulator, however the old instructions to remove various files (from the droid 1) are not accurate. I'm assuming the file names have changed, because it says the files cannot be found. I'm not too big on linux so I'm not sure how to explore a directory (good ol' cmd dir fails me).

If someone could please help with valid instructions for the droid 2 I would be very thankful. Some of my apps give me great difficulty with all this bloatware constantly eating my memory.

Thing I'd like to lose

Amazonmp3
Skype
Browser (probably not possible/a good idea)

Also, if there any way to stop apps from auto-starting, rather than deleting them? For example, maps.
