Help Noob with auto-sync questions: can I pick and choose?

The "always syncing" is my least favorite feature of the Android system. It's what made me give back my previous Android (LG Vortex). But there's some apps that I needed and they would only work on a 'droid, so I got my Fascinate.

Is there any way to choose what apps are allowed to continuously sync and what apps need to have a manual prompt to connect? Or only connect when I open the app? Or something like that?

I have a couple of gmail accounts, and I don't mind if they are always in sync (as long as all the notice I get is the icon on top - the first time I get a beep in the night like my last phone did, I'm cutting them off at the knees!!). But I must admit I am a bit uneasy about apps that have permissions with my contacts and internet connections talking to the internet behind my back!

Is there any way to select which apps can connect and sync and when?

There are many apps that will automate the process of muting notifications based on location and time. Would that be a better solution, or do you need to disable synching for some other reason?

Most apps allow you to decide whether to auto sync or not, but for those that doesn't offer this, there's not much you can do to block them.

I'm too much a control freak. I want to know when an app is conndcting and why, and have the power to deny. Some can stay connected.
