Doesn't need to be gingerbread (I've tried one of them and wife's phone got really slow after a while).

She is complaining that everything is slow again (think it's on vanilla something now).

Even asked if I could just go back to stock.

I'm looking at xtrSENSE, but didn't know if there was standard 1 or 2 that most people use.

xtrSENSE is good, and seems pretty fast for most things, but I have to say that I have lots of lag problems dialing the phone with it. xtrROM is also worth a try, but I still think that the CM7 ROMs give the best mix of features and performance right now.

Rooted or stock, the phone will always get laggy if you don't keep up with regular maintenance. It's important to go through and clear the call log, delete SMS messages (back up if yo want to keep them) and clear cache. The more you use the phone, the more junk gets piled up that will slow it down. Spending a little time on maintenance tasks will allow you to get the best possible performance out of your phone no matter which ROM you choose.

Clear the cache via recovery (dalvik) or just browsers? Not many SMS in phone. they are deleted. havent checked call log.

I use Call Log Trimmer on my phone for that. To delete cache, I use NG CacheCleaner from the market. It deletes the cache from all of your apps. You can set it up to do it automatically also.
