NOTE: This thread only tries to make a complete list of all system apps that can be removed safely. It does not mean that the apps listed here should be removed. Some system apps are needed for the phone to function properly, so proceed with caution.

Apps safe to remove:
1. AG Indian News

Apps which causes slight problems when removed:
1. Google Search - Its useless IMO, so I removed it since you can install it from the market anytime. But you may loose the search button functionality (which again I dont use) and you wont get it back even if you install it again. I just use the search button to unlock my phone, so I removed it anyway.

Apps safe to remove, but recommended not to remove:
1. LG Home - LG Home is the default launcher/homescreen. If you delete LG Home without installing another launcher, then the phone cannot function properly as it cannot show a home screen or app drawer. LG Home can be removed after installing another Launcher, but since it is the default launcher, it is the launcher that will be active when we do a factory reset. So it is better to keep LG Home in case we will have to do a factory reset. Removing it is not worth the small amount of space we get. (That being said, I did remove it)

2. Messaging - The default messaging app handles MMS better than some other popular SMS apps like Go SMS Pro. So I recommend keeping the stock messaging app and using the messaging app you prefer. Be sure to disable notifications for it or you will get 2 notifications for each message. Alternatively you can freeze the messaging app and unfreeze it when you need it. (I froze the app)

Apps not safe to remove:

NOTE: Though most of the system apps can be installed later from the android market, some apps like stock browser, music player, video player, messaging app, etc cannot. They can only be flashed as a zip file.

If you are unsure if an app is safe to remove and it is not in this list, first freeze the app using a root application like Titanium Backup Pro (paid) or Link2SD (free) for a few days. If it is not causing any problems, uninstall it. Freezing an app is just like uninstalling an app - your phone thinks the app is uninstalled while the app is actually there. If you encounter any problems, just unfreeze the app.

There are more apps that are safe to remove, I will add them later when I have more time. Meanwhile, please comment and share your experiences when uninstalling system apps, and please mention apps which are safe to remove, but are not listed here.
 
Anyone know, is it safe to remove "google search" "google talk" "sound recorder" and "voice dialer"? Thanks

I once removed Google Search and other apps that one can find on Android Market (or should I call it Google Play now?) like YouTube, Maps, Gmail, etc and the bloatware added by LG (Thinkfree Office, etc), because I was going to uninstall them then wipe data and have a backup of a clean installation only with the essential apps (the rest I could get the most updated version on Market).

But on a clean boot (after a factory reset) I noticed the search button functionality was broken (even after I installed Google Search from Market). So, on my current backup, that's the only Market app that I don't remove because of this problem.

Regarding the other three apps, I can't say anything, although Sound Recorder seems to me the least risky to remove, but it's just a guess.

Will keep that in mind about the google search, not really planning on removing anything until I have reassurance that its ok.
What about the stock messaging app? As I have go sms now.

You should disable the SMS notifications in the stock messaging app (if you haven't already). I wouldn't be surprised if deleting it would prevent all SMS apps from working correctly. I don't know for sure though. ;)

I removed the default SMS app once and used just GO SMS. I didn't face any problems.
