Root epic 4g touch rooted and rom'ed

I have some questions about root and rom and kernels.

First off, how come when i root my phone the start up screen displays sgh-i9000. Not sgh d710? And also why does the yellow triangle seem to come and go when i root my phone. If i go back to stock then root it again it goes away until i put a clockwork mod recovery on it.

Next how come the recovery never stays on the phone? Do you have to reflash recovery everytime you flash it?

When it says el29 can i update my phone to el30 or anything else in order to use different roms that are specific for certain builds? And when flashing roms i need to make sure the build matches correct? They are build specific?

Lastly what exactly does a kernel change? What are you gaining from it?

Because you Odined a tar file...Thats what happens...If you flash a tar file with Mobile Odin you won't get that and also no Yellow Triangle...

If you go back to stock with stock Kernel and not rooted you will lose Recovery...Recovery will stay only with a rooted phone...

El29 can be the Modem number or Kernel...You can mix and match...
And No...Roms aren't build specific...

Kernels stock and custom can give you more speed and can be overclocked...Again for more speed...Sumtimes custom kernels can effect the Build of the Rom in different areas...Here if you want you can go back to a stock or different kernel you should...Most of the Roms that Devs build are usually tested and bugs are fixed...Sometimes it takes a little time to get it just right...
