That's a good question. I would guess that maybe the GPS wasn't fully locked in. I know with mine, sometimes it says something like "Accurate up to 300m", and other times it says "Accurate up to 2m"....

That *might* be it.

When a photo is taken using GPS feature, how come when trying to find the location of the photo on maps the closest highway is shown and not the location of the photo.

Try this in the Maps text box. Type "loc:" without space in front of the coordinates.

So Maps will show you the "true" location of the GPS coordinates and not the nearest road close to the location.

Basically this. You need to enable the gps section under Menu > Settings > Location & Security. Otherwise it will determine your location either via your signal or, if enabled and connected, your wifi.
