I have a culinary degree and cut my teeth in 4 star 4 diamond restaurants/hotels in South Beach Miami. I no longer work in restaurants (Food Scientist now) but still love to cook at home.

I have no education in cooking, but love to eat (as does the hubby and 4 son's). I was raised on tuna helper and hot dogs and vowed never to subject anyone I love to that diet. My husband is from Mississippi and would not tolerate bad food, It was actually his only pre~req to marriage (poor guy) . He is picky as far as taste and I am picky as far as health, so I have to add flavor with spices instead of fat. I refuse to raise unhealthy children. I love playing with textures and the respponse I get from creating a "Ma, make this one again " meal.
I will be diving into the world of home BBQ soon. I picked up a
Smokey Mountain Cooker
and plan to break it in next weekend
My favorite is "Smoke & Spice". It actually explores tastes from different regions and includes almost all foods. It will give you a great foundation for rubs, mops, woods etc. Great Intro into the whole world of BBQ/Smoking .
I have to admit, I am a bit biased when it comes to BBQ but I believe Dreamland in Birmingham, Alabama is the best.. But the Teepee BBQ House in Pocahontas, MS is a very close second.. And the BBQ in Albany, NY is downright awful and should be stopped immediately.
Yeah it's not that good. The portion size is too small and the maple syrup bbq sauce is just wayy too thick.
