Removing stock apps will NOT free up user data.
Stock apps are stored on the /system partition.
Anything you install it placed on the /data partition.
I'm not even sure if Android well see music stored on the /data partition. The media scanner looks on the sdcard. (it might see music on the data partition, but you would need to move it there with a root explorer type app, or with adb)
If you download music with an app, it places it on the sdcard. No sd = no download.
