I've never done them in a fridge.. It takes a month for mine to cure.

They're good for about 3 months... so you get the whole range from new pickles to fully cured.

I love how they change flavor over time. With all the jalapenos I put in them they also get hotter as they age

I was thinking peaches but didn't think the flesh looked pink/orange enough

Looked like it was in a mortar and pestle... must have just been the color of the bowl.
